Food goes into the box cold the day it's made, in our 5,250-square-foot Dupont Circle kitchen — not days later, and never as a way to rescue something past its prime. Holding the cold from the pass onward is what lets us skip preservatives entirely: the chain does the preserving, so the recipe stays exactly as the chef wrote it.
Every order ships in an insulated cold-pack build sized for a single overnight run. That is what carries the box across transit without a single stabilizer in the food itself. Cold-pack shipping runs $14.99 an order, whatever the order is: one week or four, the box moves the same way and costs the same to move.
We ship on one weekly cycle, and the reason is the weekend. Order by Thursday at 11:59 PM Eastern and the kitchen cooks that Sunday; your box leaves Monday overnight and lands Tuesday. Moving the whole run in one night means the box is never sitting still while carriers are. When that Monday is a shipping holiday the run slides to Tuesday and the box arrives Wednesday — we would rather move the run than start a box into a slow Saturday.
